Swanson Chicken Broth

Sweet and Sour Prawn

600 g Prawns, Shelled and deveined
1 inch piece Ginger, chopped finely
4 cloves Garlic, chopped finely
2/3 jar Prego Traditional Pasta Sauce 680 g
1 stalk Lemon grass, chopped finely
1 medium Onion, cut into medium size pieces
1 Green Chili
1 Red Chili
1 stalk Lemon grass root (pounded)
2 tsp Fresh coriander leaves, chopped (for garnishing)
2/3 cup Fresh pineapple cubes
2/3 cup Japanese cucumber, chopped
2/3 cup Tomatoes, chopped
1/6 can Swanson Chicken Broth 411 g
2 tbsp Vinegar
1 1/2 tbsp Vinegar
4 tbsp Sugar
Pinch of salt

Serving: 4
1) Marinate prawns with a pinch of salt. Pan fry with a little oil and set aside.
2) Heat 1 tbsp of oil till hot and add garlic, ginger, lemon grass and fry till fragrant.
3)Add pinaapples, tomatoes, cucumber, onion, red and green chilies and stir fry for 2 minutes.
4) Add Prego Traditional sauce, vinegar, sugar and a little Swanson broth.
5) Bring the mixture to a simmer for 2 minutes.
6) Add the prawns and the remaining Swanson broth and cook for another 2-3 minutes.
7) Remove pounded lemon grass and garnish with chopped coriander leaves.
8) Read to serve with rice.
