Swanson Chicken Broth

Tofu Fantastica

(A) Ingredients:
2 big Taukwa
100g Prawns without shell
50g Carrot
10g Corriander Leaves
40g Chopped spring Onion
1 Egg White + 2 Egg Yolks
1/2 tsp Salt
1 tsp Sesame Oil
a dash of Pepper

(B) For Crystal Clear Sauce:
1 cup Swanson Clear Chicken Broth
(can be taken from either can or carton)
1/8 tsp Salt
1/2 tsp Sugar
1 tsp Light Soya Sauce
2 tsp Potato Starch

(C) For garnishing:
1 Red Chilli (remove seeds cut to strips)
A few Corriander leaves

tsp = teaspoon, TBS = Tablespoon
Cooking Detail
For 6 servings
1) Use a food processor to process Taukwa and Prawn together to form paste. Cut Carrot to very small dices, chop Corriander Leaves, chop Spring Onion. Mix all these with 1 Egg White and 2 Egg Yolks. Add in seasonings (1/2 tsp Salt, 1 tsp Sesame Oild and a dash of Pepper)

2) Bring water in a steamer to a rapid boil. Grease a Pyrex dish with a little oil, line with a plastic sheet. Size of Pyrex dish is a 14cm by 18cm. Fill Pyrex dish with Taukwa mixture from step (1). Level well and steam in a rapidly boiling steamer for a 15 minutes. Remove from steamer, pour away water collected from steaming and cut to 3 wide slabs.

3) Arrange 3 slabs of TOFU FANTASTICA on a plate. For making Crystal Clear Sauce: Combine all (B) ingredients and bring to a boil, stirring always till the right consistency, garnish with red Chilli and Corriander Leaves. Ready to serve.
